“keep a bit of our 2015 fruit aside, make a few small batches of wine, a bit of stems, some co-fermentation, a bit of carbonic, & leave a barrel or two unsulphured & untopped, with the vision of putting these pieces together.”
The result is a dangerously drinkable. Light, easy-going. Kind of wine where you pour a glass and find yourself doing so again shortly thereafter.
Had some substance to it: a bit of savoury character, spice, leaf, berry fruit. Sufficient to take a chill. Cracking summer red option. 91
